Baked Tuna Stuffed Tomatoes (Grain-free)

Here's a quick and easy dinner idea that only requires a few ingredients. Plus it's healthy. PLUS it's delicious. 

And look how pretty!


What you'll need:

• Tuna salad - I make mine differently every time. Some things I love adding: raisins, chopped olives, minced onions, pickles, red peppers. And if you're really stuck for a good recipe, this one looks super yummy.

• Hollowed tomatoes (I used vine tomatoes)

• Shredded mozzarella cheese (I used this because I had it, but parm or cheddar would be great too)

Start by cutting the "cap" off your tomato and hollowing out the seeds and core. Then spoon in your tuna salad and top with some shredded cheese. Bake at 350F for about 20 minutes, or until tomato is tender and cheese is melty.


I've also seen these made without cooking the tomatoes, and I love the idea. Just spoon your tuna in and you're done. Maybe next time :).
