Want a fun way to keep pizza in your life while eating grain-free? Because, believe me, that's no easy task. On the [delicious] list of things that we now go without, pizza is one of the most lamented sacrifices. So, in the days when donuts are topped with everything from breakfast cereal to bacon, why not add pizza to the list, and make these yummy, savory donuts for dinner...?
What you'll need:
• Mozzarella and pizza toppings
For the dough
• 1/2 cup almond flour
• 1/4 cup flax meal
• 1 tablespoon coconut flour
• 1/4 cup butter
• 1/4 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon oregano
• 1/2 teaspoon minced onions
• 3 eggs
• 1/4 cup mozzarella
To begin, combine dry ingredients (all but the butter, eggs and cheese). Then mix melted butter and eggs well, stir in the cheese and incorporate with the dry ingredients until the mixture is nice and doughy.
Spoon the mixture into a greased donut pan and bake at 350F for 12-15 minutes. And while they're baking get your toppings ready.
Time to top! Put a little cheese on first to hold the toppings in place when it melts. Then add your toppings and sprinkle on some more cheese.
And maybe a little more cheese ;).
Pop them back in the oven for 3-5 more minutes so the cheese can get nice and melty.
Serve over some warmed marinara and enjoy this creative low-carb pizza!
