This is one of my favorite quick dinner ideas. Fast, easy, and always so yummy. AND you’re trading in a calorie-packed grain-based crust for a delicious, tender portobello coming in at just 35 calories max.
What you’ll need:
• Portobello mushrooms
• Tomato sauce (or homemade tomato chutney - recipe to come!)
• Shredded cheese
• Pizza toppings - I used chopped artichoke hearts, green olives and red pepper flakes
To begin, drizzle your mushroom caps with oil and season with salt and pepper. Bake them at 375 degrees F, for about 5 minutes. Once they’re tender take them out and add the tomato sauce and toppings.
Pop them back in for 15-20 minutes, or until the cheese is good and melty. Done and done! Now dig in and don't feel bashful about going back for seconds.
