Frozen Mangos and Cream Bars (Dairy-free, Grain-free, No refined sugar)

Look at this lovely dessert! Something can taste amazing, but if it’s not at least a little fun to look at, good luck getting anyone to eat it. Especially dessert. And this, my friends, is both delicious and beautiful.

And I think you’ll be surprised – it’s so easy to make!

What you’ll need:

Cream Layer

• 1 cup pure coconut milk

• 3 teaspoons stevia blend (I use Fructevia)

• 1/2 cup pineapple chunks

Fruit Layer

• 1 mango, diced

• 2 cups pineapple chunks

• 1/4 teaspoon vitamin C powder

• 1/2 teaspoon stevia blend

Dark Chocolate Drizzle

• 1 teaspoon stevia blend

• 1/2 cup coconut oil

• 1/4 cup unsweetened cocoa

First line a 8x8” (or 6x10”) baking dish with parchment paper, and set aside for a moment. Then combine your fruit layer ingredients in a blender and blend until smooth.

Pour the sweet mixture into your parchment lined dish and pop into the freezer. You want this to freeze completely before you pour in the next layer, so give it a little time.

Time to make the chocolate drizzle now! If you haven’t done this yet, get excited because it’s so cool. Just add the coconut oil, cocoa, and stevia blend to your saucepan on low heat, and stir until incorporated. Boom. Yummy, body-friendly dark chocolate sauce! Set this aside for a few minutes.

And add the cream layer ingredients to the blender and process until smooth.

And when your fruit layer is good and frozen, pour it over top.

Drizzle time!

Put it in the freezer, and let it set up. In about an hour, once it’s good to go, pull it out and peel away the parchment. It’s so fun to see the layers :). 

Make sure to give it a few minutes to warm up before you dig in. Enjoy, friends!
