In this heat, I’m way more excited to drink a hydrating smoothie for breakfast than anything else (cooking eggs on a hot day... just yuck). And this one’s my new fave. The watermelon packs such a nutritious punch. High in vitamins C, A, beta carotene, zinc, AND as iron-rich as a 3 ounce serving of salmon (wow!). And it’s sooo good.
Plus, the handy thing about smoothies is that you can add in pretty much any fruit you’ve got sitting around, and it only makes it better. So for my second batch of this, I tossed in some mango-peach puree I had leftover from another recipe. SO yummy.
What you'll need:
• 1 cup strawberries
• 2 cups watermelon
• 2 tablespoons chopped mint
• 2/3 cup greek yogurt
• 1 teaspoon stevia blend (optional)
Yields 2 servings
Just toss it all in a blender and process until smooth.
