Watermelon “Cupcakes”

Look at these little beauties. I can’t say enough; they’re gorgeous, delicious, and deceptively simple. And they’re grain-free! 


What you’ll need:

• Seedless watermelon

• Blueberries

• Strawberries

• Mandarine oranges

• Shredded unsweetened coconut

Whipped cream:

• 1 cup heavy whipping cream

• 2 tablespoons sugar

Get started by cutting uniform slices of watermelon. No worries if they’re not perfect, you can shave them down a bit after they’re cut into circles.

Find a small glass and gently press onto your watermelon. Use those circles as cutting guides. 


Combine your sugar and cream in a chilled mixing bowl and whip up on medium-high until stiff peaks form. Then pat dry each watermelon circle before you frost it. 

Start by topping your first piece with a bit of whipped cream...


Put a few blueberries on and add a little more cream.


Stack the second disc on top...


And frost the entire outside, just as you would a cake. A tiny, beautiful watermelon cake.


Now decorate with your fruits and give a little sprinkle of coconut.

I just love how pretty these are!
