Honey Balsamic Fruit Salad

Looking for an uncommonly delicious fruit salad recipe to take to a 4th of July picnic? Or to eat entirely in three days (...not that I do that)? Well, here ya go! The honey balsamic dressing plus the mint (which is a must, don’t skip it!) make this salad a cut above.

It’s seriously yum.

What you’ll need:

• 20 oz pineapple chunks

• 2 nectarines

• 3 kiwis

• 1/4 cup shredded unsweetened coconut

• 15-20 strawberries

• 10 mint leaves, finely chopped

• 1 tablespoon finely chopped and seeded jalapeño, which is about half a pepper (optional, but encouraged)

Dressing:

• 2 tablespoons vinegar

• 2 tablespoons honey

• 1 tablespoon pineapple juice

You want to chop the mint super finely, so it distributes well throughout the dish.

Add in the coconut, and get the ingredients for the dressing...

Whisk up the vinegar, honey and pineapple juice, pour it in the fruit, and toss. The balsamic tang goes so perfectly with this sweet salad. What a fitting accent. I really think you’re going to like it.
