Only four ingredients in these tasty pancakes, folks. And you can feel good about putting each of them in your body!
I ate mine topped with raspberry purée. So good!
What you’ll need:
• 3 eggs
• 1 large apple
• 1/4 cup coconut flour
• 2 teaspoons cinnamon (plus a bit for when you’re boiling the apple)
Yields 8 medium pancakes
First you need to cut up and cook your apple. I just put a couple inches of water in a saucepan and boiled it (and a few shakes of cinnamon) until it was soft. Didn’t take too long.
Once they’re soft, drain and stick them in your blender...
Along with the rest of your ingredients...
And whip it up!
Now just treat it as you would regular pancake batter that may need just a smudge more cooking time. Grease your pan, and cook on medium low heat until the edges begin to firm up. Then flip!
Note: Because these are lacking gluten, at first they’re a little more fragile than regular pancakes. So just be a bit careful with that first flip. After that, no worries!
For a real treat, serve up with a little maple syrup and fresh fruit!
