More yummy gummies! Gosh, these are so pretty. And super simple to whip up.
What you’ll need:
• 1/8 cup gelatin
• 1 tablespoon honey
• 1/2 cup blueberries (before pureed)
• 1 teaspoon stevia blend
• 1/4 teaspoon citric acid
First up, measure the berries before you puree them. Blend them until their texture is nice and smooth. Then combine the dry ingredients (gelatin, stevia blend, citric acid) in a glass bowl and set aside for a moment. Mix the wet ingredients (honey & blueberries) separately and then stir them into the glass bowl with the dry.
Once thoroughly combined, bring a couple of inches of water to a boil in a saucepan and place the bowl into the water. Stir the gelatin mixture as it melts.
Once it’s smooth and the texture is consistent, use a baster or a spoon to transfer about a teaspoon at a time into your candy mold. Pop it into the freezer for a few minutes to set. Once they’re solid, gently peel them out of the mold.
Note: I would recommend using a mold with a simple shape. When you’re working with fruit in the gelatin, it makes the finished product a little less firm and more likely to break. So little hearts were perfect for this.
