Savory Sweet Potato Fritters

Sure, these fritters are meat-free, dairy-free and great sources of vitamins A and C. And yep, they’re super simple to make, using ingredients you can feel good about. But let’s focus on the fact that they’re so super delicious. So good that your husband will love them. For real.

I mean, look at them.

What you’ll need:

• 1 large sweet potato
• 1 egg
• 1 teaspoon minced onion
• 1 teaspoon salt
• 6 teaspoons minced garlic
• 1/2 teaspoon ground cumin
1/2 teaspoon marjoram
• 1/4 teaspoon cayenne pepper
1/4 teaspoon ground coriander
1/4 teaspoon black pepper
• Olive oil

Yields 2 servings

First wrap the potato in a damp paper towel and microwave for ten minutes; flipping halfway through.

Once it’s cooled – peel, mash, and add the rest of the ingredients except for the olive oil. And mix’er up!

On medium heat, cook tablespoonfuls of the mixture in a bit of olive oil, flipping until the outside is nicely browned and lightly crispy.

These are great served over pasta, rice, veggies, or on their own as a side. I cooked up some spanish rice and veggies and they went perfectly!
