Almond Horchata

I’ve clearly missed the Cinco de Mayo train, but this is definitely worth a late post. I love horchata and this recipe is so fun!

What you’ll need:

• Cheese cloth

• 5 cups of water

• 1/2-3/4 cup sugar (depending on how sweet you like it)

• 1/2 pound skinless almonds

• Pinch of salt

• Half lemon

• 1/4 teaspoon cinnamon

• Cinnamon stick to garnish

Start by grinding the almonds into a fine powder. Really give them the business.


Then put your 5 cups of water into a bowl and add a pinch of salt...


And the half lemon, sliced up.


Then pour the almond meal in and give it a little stir.


Allow the mixture to sit for two hours, unrefridgerated.


Drape your cheese cloth over a large bowl and strain the mixture a couple times to remove all the bits of almond.


Stir in the sugar and cinnamon until the sugar’s dissolved. Depending on how sweet you like it, 1/2 cup may be enough. Give it a taste - if not, add the last 1/4 cup.
