The warmth of honey paired with tart candied lemon twists... just yummm. And I even added a tiny pinch of cayenne to a few of them. Lollipop love.
One of the great things about making your own lollipops is that you can decide exactly what you want (and do not want) to put in them. I happily skipped the corn syrup, artificial flavoring, and colors.
And the results are scrumptious!
What you’ll need:
Candied lemon peel
• 1 organic lemon
• 1 cup sugar
• 1 cup water
• 2 cups sugar
• 1/2 cup water
• 1/2 cup honey
• 1/4 cup butter
• Candy thermometer
• Wax paper
• Lollipop sticks
First, let’s get the lemon peel candied. So easy. Slice your lemon – approx 1/4 inch slices. Then remove the fruit from the peel and halve.
Next bring the peels to a boil in a sauce pan. Once boiling, dump water and replace with fresh water. Bring to a boil three separate times.
Then combine the one cup of sugar with one cup of water, bring to a boil and then reduce heat. Add in your peels and simmer until the white parts are translucent.
Set them aside and prepare for placing them onto your lollipops as soon as they’re poured.
Now for the pops! Combine all ingredients in a saucepan and bring to "hard-crack" temperature – 300 degrees F.
Let the bubbles calm down, spoon tablespoonfuls onto the wax paper, and place your candied peel in each. And cayenne, if you like your sweets a bit spicy. Then press the stick in and allow to dry.
And some I balled into little dum dum-like pops.
