Oh my goodness, this is heavenly. Forget all the pizza chain dessert pizzas you’ve ever seen, because this one blows them out of the water. Chocolate and strawberries topping rich, creamy mascarpone, spread over a giant chewy chocolate chip cookie...! It’s absolutely as good as you’re imagining. Probably better.
What you’ll need:
• 1 pouch (1 lb 1.5 oz) chocolate chip cookie mix
• 1/2 cup of butter, softened
• 1 egg
• Bag of chocolate chips (I prefer mini for this – maybe it’s just me, but I think it makes for an easier bite)
• Fresh strawberries
• 2 cups of heavy cream
• 1/4 teaspoon of citric acid (got mine from a brewing supply store – less expensive!) *Note: tartaric acid or lemon juice work too.
• Candy thermometer
• Strainer and bowl
So here’s the thing. Mascarpone cheese is delicious. And you can pick some up at the store if you’re in a hurry, no problem. But if you have the time (only a day or two), making it fresh is definitely the way to go. It tastes better than store-bought (imo), it’s super simple to make, and it’s way less expensive. Plus, there’s just something so satisfying about making your own cheese.
Win, win, win... win.
Here’s how. Pour two cups of whipping cream into a sauce pan and heat on medium high. Stirring constantly. Stick your candy thermometer in there and keep a close eye on the temp.
Once it reaches 180 degrees F, take it off the heat and add the citric acid. Keep stirring.
It’ll thicken a bit at the start, and you may see some small curds. All normal.
Line your strainer with cheese cloth and place it on top of your bowl to collect the whey. If you’re out of cheese cloth, like I was, you can use a layer of paper towels instead. It worked just fine.
Pour your mixture in, and pop it in the fridge for about a day. Mine was just right after 20 hours.
When it’s done it’ll look like this. Condensed, creamy, and ready to spread!
Yum! Now put your fresh cheese in the fridge while you make the rest of your pizza.
First up, let’s make the dough for the crust. Combine the cookie mix, egg, and butter until it’s a soft dough.
Grease your pizza pan and spread the dough out onto it. I tidied up the edges with the back of my spatula.
Put it in the oven at 350 degrees F, for 15-20 minutes. Mine was perfectly done in 15.
Stick it in your fridge to cool off. Once completely cool, evenly spread your mascarpone cheese, leaving about an inch around the edge. That makes the slices easier to handle.
Now slice your strawberries and load it up!
Chocolate chip time :).
And next melt a cup of chocolate chips in the microwave for intervals of 30 seconds until completely melted. Stir until all the lumps are gone.
Spoon your melted chocolate into a baggie, and snip just the very tip of the corner so you can pipe it on.
Just a light dusting of powdered sugar and you’re in business!
